そば打ち歴25年という先生に、新設丁寧にそば打ちを教えていただきました。 そばは打ち初めてなこともあり、そば粉をこねるのも、麵の形に切るのも最初は上手にできませんでした。 それでも先生に和やかな笑顔で優しく教えていただけ、最後は何とかそれなりに形に上達(というほどでもないでしょうが)できたと思います。 おかげさまで、楽しみながら初めてのそば打ちを体験をすることができました。 そしてそばを打ち終わったあとがまた良かったんです。 自分で打ったそばを茹でてもらえ、食べることができるんです。 それも、おいしく上がった天ぷら付きで。 茹で上がったそばは、自分が切ったとおり、太いのやら細いのやらが混在してて。 そんなふうに見た目は悪いんですが、自分で打ったという愛着もひとしおのそばを、おいしく揚がったてんぷらと一緒に食べることができました。 そば打ちの先生、受付していただいた女性職員の方、会計のところにおられた男性職員の方、厨房でそばを茹でてくれた女性職員の方、皆さんにすごくよくしていただき、本当に感謝です。 施設の皆さんの対応も本当に暖かく、これを機会に自分でも自宅でそば打ちしてみようかなあ、と本気で考えているほどです。 ありがとうございました。

For this experience, we've got everything set up, from the soup and ramen sauce to the fragrant oil and chashu. First things first, we'll craft semi-soft boiled eggs. Then, we'll dive into prepping ramen toppings, followed by slicing and combining the ingredients for our gyoza, which we'll then deftly fold. After that, we'll infuse the chashu with its delicious flavors and sizzle up the gyoza to perfection.The grand finale includes crafting the soup, boiling the noodles, and the oh-so-cool noodle draining technique that never fails to impress. Finally, we'll artfully assemble the toppings onto the ramen. Trust me, learning the ins and outs of ramen creation will undoubtedly deepen your love for this dish .

We start by splitting real bamboo and making a platform for nagashi somen! We harvest the vegetables to be cooked in the pesticide-free vegetable field and cook them together. The menu is vegetarian (vegan). Enjoy freshly picked seasonal vegetables. Nagashi somen is an experience where you neatly assemble split bamboo and eat the noodles that flow under water. The nagashi somen platform made from real bamboo is very beautiful, fun and a wonderful experience. After the meal, you can also try your hand at bamboo crafts if you wish.

You can feel the Japanese food culture first-hand♪ We will carefully teach you how to make authentic nigiri, from the size of rice to how to make it. 8 pieces of nigiri (tuna, salmon, shrimp, egg, octopus, etc.) + mini udon hotpot *contents subject to change depending on the season. Transform into a skilled artisan donning the same white costume as an Itamae (sushi chef)! Your first job as an Itamae is to prepare your own wasabi for use in sushi. Be careful, or your tears won't stop flowing.The next step is to prepare sushi nigiri. First, you will practice making the rice. The way you grip the rice makes all the difference in taste. If you can do this, you are 50% of the way to being a chef. Once you can make the rice, let's put some ingredients on top of the rice! You will complete 8 different sushi combos including Japanese tuna, salmon, Edomae conger eel, seared wagyu beef, and hand rolls. Compare and contrast the sushi you have tasted so far with the sushi you have made yourself! If your sushi tastes better, you are welcome to make your debut as an Itamae (chef) at our restaurant!If just experiencing the sushi is not enough for you, we can also attach a A GoPro will be used to capture a realistic and authentic video of your experience as a sushi chef.
