The spring-fed ponds are highly transparent and have been selected as one of Japan's 100 famous springs, making Oshino Hakkai a popular spot for delicious soba noodles. We make delicious soba using underground water from Mt. Fuji. The soba dough is kneaded and shaped from powder, and then rolled out using a rolling pin. Children as well as adults can enjoy an extraordinary experience. Soba is a little more difficult to make than udon or hoto. Compared to udon and hoto, the dough for soba is thinner, and the noodles need to be cut into thinner pieces. Therefore, it may break into small pieces during the boiling time. In order to make it as difficult as possible to tear it into pieces while boiling, there are conditions such as mixing the flour and water quickly and evenly, making the dough and kneading it thoroughly, and rolling out and cutting it quickly.
