If a cafe is a hideaway, this laboratory has the atmosphere of a "secret base." The owner, who is obsessed with the depth and unanswerable charm of coffee, is researching and studying every day to get to know coffee better and to pursue the creation of "coffee that makes you want to talk about it with others and makes you smile". The owner carefully selects coffee beans from producing areas around the world, including Central and South America, Africa, and Asia, and thoroughly manages the process from cultivation to harvesting and transportation. Using these top quality beans, you will experience roasting, the most important process that determines the taste and aroma of coffee. For the roasting process, we use a roasting pan called "mankashakasha", which is actually used in Ethiopia, one of the countries where we purchase beans. In either case, it is difficult to conduct heat thoroughly to the inside of the raw beans in order to remove the moisture contained in them. In addition, even if you choose the same beans and roast in a hand pan, the heat transfer changes depending on how the beans roll and how the wind hits them, so even if the conditions are slightly different, the taste will not be the same and an original taste will be created. The staff will give you a thorough lecture, so please feel free to try it. When the roasted beans are cooled and ground in a coffee mill, a scent containing various elements, including the scent of nuts, caramel, and citrus, rises. Fish caught in the Nada area, south of Awaji Island, are eaten in sushi restaurants in Tokyo. You can board a fishing boat with a veteran fisherman who makes a living from fixed net fishing. He usually landes his catch at 15 locations a day, but on this tour you will visit one of them. It is a valuable experience to learn how fixed net fishing works, the secret of the deliciousness of the fish caught here, and the hardships they endured. Experience farm work and life in the four seasons for two days and one night at a farmer's house in a farming village at an altitude of over 800m in the Yatsugatake area of Nagano Prefecture. You will not be just a guest, but you will spend a warm time as a member of the family, and you will get a glimpse of the unique lifestyle of this land, where people live in gratitude for the blessings of nature. You will be able to experience a part of the nostalgic activities of people who have been doing things in accordance with the changes of nature, such as harvesting highland vegetables, making preserved foods such as dried persimmons, pickled Nozawana, and miso, picking wild vegetables, experiencing a wood stove, and making shimenawa. You will also have the opportunity to cook dishes using local ingredients together and talk with the farmer around the table. This experience is recommended for families with children and groups of friends! An English-speaking guide will accompany you at the meeting point, so you can have a smooth conversation with your family before the tour begins. We will also provide you with an interpreter that you can use during your stay, so you don't have to worry if you don't speak Japanese.
