Our restaurant is located in Fuji Kawaguchiko Town, located in the Fuji Five Lakes area of Yamanashi Prefecture, and is holding a hands-on class where everyone can make and enjoy Yamanashi's local cuisine. It is an unusual type of udon that is characterized by its hard and chewy noodles and toppings such as horse meat and cabbage. It has also been selected as one of the ``Top 100 Local Dishes from Rural Areas, Mountains, and Fishing Villages,'' selected from among the local flavors of each region. Yoshida's udon noodles are characterized by thick and chewy noodles, toppings made with horse meat and cabbage, and a soup made with miso and soy sauce. This is the only place in Japan where you can eat it with a spiciness called suridane. Yoshida's udon was originally a home-cooked dish, so each restaurant has its own characteristics. For example, some restaurants use beef or horse meat, and the sides vary in hardness and length. Although there are general rules, there are no clear rules, so the freedom of making them may also be a characteristic of Yoshida's udon. In this plan, customers will make udon noodles from powder.
