This is a special program offered twice a month by Japanese restaurant Yuzuri, a popular restaurant in Abashiri. You will watch as the owner, Saito, who was the head chef at a hotel in Abashiri city, the city of food, prepares dishes using seafood from Abashiri, and receive instruction in the art of Japanese cuisine. Enjoy his superb knife skills and exquisite cooking. After learning about the differences and tips for preparing seasonal fish, as well as how to use professional seasonings, you will experience making salmon roe pickled in soy sauce (or oysters pickled in oil depending on the season). Plan attractions
Teaching how to prepare flatfish We will show you how to fillet fish and teach you the tricks. The way a fishmonger fillets a fish is different from the way a chef fillets a fish. A fishmonger focuses on speed, but a chef who is cooking in front of others must fillet the fish beautifully and without showing too much blood. Also, even with the same fish, the way it is filleted differs depending on whether it is for steaks or for a stew. In the case of salmon, there are three ways to cut it: "daimyo oroshi", "three fillets", and "five fillets".
Shrimp peeling experience We will show you how to peel shrimp and teach you the tricks. Peeling shrimp may seem simple at first glance, but there are some tricks to peeling them neatly for cooking. By mastering this, you will acquire a technique that will be useful at home.
Participants listen to the craftsman talk while eating You will enjoy a feast of professionally made Japanese cuisine while learning tips for making delicious Japanese cuisine, such as how to remove the fishy smell from fish, how the chef will talk about salt usage techniques, the best time to add sugar to a dish, how to add soy sauce, and how to make Tamazake.
