The wheat used for the binder is also new wheat hunted this year (`・ ω ・ ´) b Soba is made in a well-ventilated greenhouse, so you can rest assured even in the rain! It's warmer than the outside ♪ * If it's cold, let's bonfire! We welcome families, individuals, and even beginners!

Domestic new soba noodles made from new wheat

At Wheat Project, we saw the domestic soba variety "Hitachi Aki Soba" for the first time in Numata rice fields, and the other day, we were able to harvest it for the first time !! It is said that it has excellent sweetness and fragrance ♪ Also, the wheat used for the binder was hunted this year, "Norin 61"! Norin 61 is a wheat variety that has been popular for about half a century since about 1945, but now it is said to be a phantom wheat due to a decrease in distribution volume. Why don't you enjoy the fresh flavor of new soba and new wheat with three freshly ground (freshly ground, freshly beaten, boiled) + one freshly (caught) "four freshly caught"?

Freely choose the proportion of soba

Have you ever seen words such as 100% buckwheat noodles and 28 buckwheat noodles at a soba restaurant? This is the ratio of buckwheat flour used for noodles, and 100% buckwheat flour for 100% buckwheat. For 28 buckwheat, buckwheat flour is about 80%.
