Plan description

"Otofu" is one of Kyoto's representative ingredients. We will make soy milk and okara, and make everything from "Oboro tofu" to "Momen tofu". The freshly made "Oboro tofu" is exceptionally delicious, and can only be tasted during this experience! The finished "Otofu" will be boiled in hot water and enjoyed. *The experience will be a collaborative effort in groups of 2-3 people. [Note: Regarding supported languages] Reception and experience guidance at our facility will be in Japanese only. Please note that you will be given a textbook in the relevant language and guidance will be provided using a translation app and gestures.

Soy milk/okara making

・Making soy milk: Put the prepared raw soybean paste into a pot and boil thoroughly while stirring the bottom of the pot to prevent it from burning. Pour the cooked soybean paste into a cotton bag, and the strained liquid is soy milk. ・Making soybean pulp: The liquid remaining in the cotton bag after squeezing is the soybean pulp.

Making tofu

Pay attention to the temperature, mix the bittern lightly from the bottom, cover it and leave it for a while to complete the "Oboro Dofu". In addition, spread cotton in a wet wooden box, gently put the "Oboro Dofu" in the pot, place the lid and weight stones, and drain the water.

Completion

Put the drained tofu in cold water, remove excess bittern and lye, and complete the "cotton dofu". Enjoy the freshly made tofu as "Yudofu"!
