Yoshida's udon noodles are characterized by thick and chewy noodles, toppings made with horse meat and cabbage, and a soup made with miso and soy sauce. This is the only place in Japan where you can eat it with a spiciness called suridane. Yoshida's udon was originally a home-cooked dish, so each restaurant has its own characteristics.
