Visit the holy land of modern sake in 1904. Its journey began at this red-brick school (brewery). This historic building laid the foundation for modern sake. This is more than just a brewery; it's a "sacred ground of revolution" that paved the way for the future of sake. The story of "Hiei" and "Byakko": We entrust the soul of Tokyo's Kita Ward to our two proud brands, "Hiei" and "Byakko." This rare premium sake is a tribute to Shibusawa Eiichi, the "father of Japanese capitalism." Made with rice from Eiichi's birthplace and yeast from the historic Asukayama region, every drop embodies Japanese tradition and the unique terroir of this land. A sophisticated sake sommelier will guide you through the exploration of five distinctive sakes. The highlight of the afternoon will be a carefully planned lunch pairing experience. Each dish is made with carefully selected seasonal ingredients to maximize the depth of the flavors of "Hiei" and "Byakko." Enjoy the traditions of sake brewing, the inherited craftsmanship, and the ultimate harmony with all five senses. Choose from three plans for how to spend your time after lunch: 1. Tour the Red Brick Sake Brewery (formerly the First Brewery Research Institute Factory), a mecca for modern sake that is usually closed to the public

The former Brewing Research Institute's First Factory, commonly known as the "Red Brick Sake Brewery," was established in 1904 with the aim of modernizing Japan's brewing technology. It was designed by Tsumaki Yorinaka, one of the three greatest architects of the Meiji era. Modeled after a German beer factory, the building developed Japanese sake brewing from a scientific perspective, and has come to be known as the "holy land of modern sake." It also served as a training factory for human resources and hosted sake tasting competitions, making a significant contribution to the development of Japan's alcohol industry. Highly regarded for its architectural and historical value, the building was designated an Important Cultural Property of Japan in 2014. The Brewing Research Institute was relocated to Higashihiroshima in 1995, and although sake brewing is no longer taking place there, the original facilities remain.

A pairing lunch featuring five types of sake, including premium sake "Hiei" and "Byakko," carefully selected by a sake sommelier

After the factory tour, we'll move to another location for a gourmet meal. We've prepared five types of sake carefully selected by our sake sommelier, including the Daiginjo sake "Hiei" and the Kijo sake "Byakko," both of which are local sakes associated with Eiichi Shibusawa, who built the foundations of modern Japan. "Hiei," made with yeast from Asukayama and rice from Fukaya, the founder's hometown, is truly a sake brimming with history and local climate. Enjoy a pairing lunch featuring seasonal ingredients that bring out the unique character of each sake to the fullest. Enjoy a special time chatting with fellow sake lovers and savoring the harmony of history and the bounty of the season. Solo participants are also welcome. New encounters will help create an unforgettable day.
