Azuma Sake Brewery is said to be the first in the area to use a stone-built storehouse suitable for temperature control, which is important for sake brewing. The storehouses are made of Kannonshita stone, which is excavated in Komatsu. In this program, you can observe sake brewing in the middle of preparation at Komatsu's stone warehouse, which has been certified as a Japan Heritage, and at the end, you can also compare sake. A rare opportunity to see the inside of the brewery during preparation! Above all, what is essential for sake brewing at Higashi Brewery is that it is done in a stone storehouse that utilizes Komatsu's Kannonshita stone, which is designated as a Japan Heritage site. The building itself is designated as a registered tangible cultural property of Japan. Ishigura not only looks cool, but they are also functionally excellent. We will actually go inside the brewery and see how it is brewed to see what aspects of the stone brewery are effective for sake brewing. You can smell the steamed rice, sake, and koji in the brewery, which is in the middle of preparation. You can not only listen to and watch the explanation, but also experience the sake brewery with your whole body.
Higashi Sake Brewery is surrounded by several warehouses. One of the warehouses is also a tasting space. Among the sake lined up in a row, there is also Daiginjo, which has been adopted as a sake for government aircraft. After the tour, you can also taste and compare the tastes of sake from this brewery. *Please refrain from tasting if you are coming by car.
