当店は魚屋の息子として、肉類を一切使用せず、
奈良の水産市場から、目利き・仕入・下処理・調理・提供まで、シェフが一貫して行っております。
地場野菜も、奈良県桜井市の農家「ルーラル・ヴィレッジ」の下で、
土作り・種まき・定植・水やり・収穫・出荷などの農作業を教わり、
野菜ができるまでの過程を把握し、料理に反映しております。
「美味しく」「楽しく」をモットーに、季節のコース料理を中心としたメニューとなっております。
そんなSAKANAYAが送る、魚料理専門の料理教室です。
レシピではなく、魚のさばき方、魚一匹を無駄なく使う為の基礎知識を学んでいきます。
『これから料理を始めたい･･･』
『子供に魚を食べさせたい･･･』
『自分で釣った魚をさばきたい･･･』

講師による魚の三枚おろしデモストレーション まずは講師がお手本をお見せします。 コツもしっかり教えます。
魚の三枚おろし実習 講師の見本をマネてみましょう！ 少人数制なので質問があれば遠慮せず聞いてくださいね。
調理実習 さばいた魚を使い、調理します。 プロの仕事を見られるチャンスです！
食事 みなさんでランチです！ ごはん、お造りやカルパッチョ、メイン、スープのワンプレーランチになります。 ※内容は変更する場合があります。
雑談・復習 今日の復習をします。 ご自宅でも同じようにできるよう、アドバイスやコツをお伝えします。
