This is the 109th year since the company was founded in 1923 after shifting from a wholesaler selling rice and fertilizer to a sake manufacturing business. Since its founding, it has continued to produce its flagship brand, “Shunshin,” and became a company in 1955. However, in 1996, management changed due to poor management and became Kinmon Sake Brewery. After that, Hirotsune Nishide, the current brewery master brewer, was inspired by his childhood experiences and longing for sake brewing to start sake brewing at Shikano Sake Brewery in Kaga City from Noto Toji and Naohiko Noguchi, who are 'contemporary master craftsmen'. After learning, he bought back Nishide Sake Brewery, and in 2014, it became a limited liability company, Nishide Sake Brewery. Currently, it is a complete family production, and sake brewing is mainly done in small quantities with particular attention to each ingredient, yeast, and manufacturing method. We are particular about steaming rice in wooden barrels (koshiki, steamers), which is becoming rare these days, and from this season we are also trying to prepare rice in wooden barrels. In addition, as a sightseeing sake brewery, we provide brewery guidance and tasting sales at the shop, and open a “cafe tour” only on Saturdays to make sake that is not bound by the framework.
