"Oh! Den" run by owner Ishiguro is one of the famous restaurants in Abashiri that you cannot enter without a reservation. He purchases fresh fish for the number of people making reservations that day, and always serves dishes using seasonal fish from the Okhotsk Sea. He is so thorough in his selection of ingredients that he sometimes goes out on fishing boats himself to learn more about fish, and even rents farm land to grow vegetables for his restaurant. Since the restaurant is busy every night with reservations, a special program was organized for the daytime. Owner Ishiguro was born in Rausu Town at the base of the Shiretoko Peninsula and grew up in the region's unique food culture. You will learn tips on how to fillet fish and how to identify delicious fish from the owner. Owner Yamashita, who had only planned to stay for six months after returning from studying abroad in London, fell in love with Abashiri and decided to move there. This town is rich in nature in every season, and seafood and mountain produce nurtured by the Sea of Okhotsk, so much so that it is impossible to master it. Masuda Suisan is a long-established handmade dried fish shop that handles overnight dried Atka mackerel, mackerel, and herring. In this program, which is held every week, you can learn not only how to make dried fish, but also how to select delicious dried fish and tips on selecting fish, which you can use in your daily life. This is a special program offered twice a month by Japanese restaurant Yuzuri, a popular restaurant in Abashiri. You will watch as the owner, Saito, who was the head chef at a hotel in Abashiri city, the city of food, prepares dishes using seafood from Abashiri, and receive instruction in the art of Japanese cuisine. Enjoy his superb knife skills and exquisite cooking. After learning about the differences and tips for preparing seasonal fish, as well as how to use professional seasonings, you will experience making salmon roe pickled in soy sauce (or oysters pickled in oil depending on the season).
