O! Den, run by owner Ishiguro, is one of Abashiri's famous restaurants, requiring reservations. He purchases fresh fish for the number of reservations made that day, always serving dishes made with seasonal Okhotsk fish, and is so meticulous in his selection of ingredients that he sometimes boards a fishing boat himself to learn more about fish, and even rents farmland to grow vegetables for his restaurant. Because the restaurant is bustling with reservations every evening, a special program has been organized for lunchtime. Born in Rausu Town at the base of the Shiretoko Peninsula, owner Ishiguro grew up surrounded by the region's unique food culture. This is a special program offered twice a month by Japanese restaurant Yuzuri, a popular restaurant in Abashiri. You will watch as the owner, Saito, who was the head chef at a hotel in Abashiri city, the city of food, prepares dishes using seafood from Abashiri, and receive instruction in the art of Japanese cuisine. Enjoy his superb knife skills and exquisite cooking. After learning about the differences and tips for preparing seasonal fish, as well as how to use professional seasonings, you will experience making salmon roe pickled in soy sauce (or oysters pickled in oil depending on the season). Masuda Suisan is a long-established handmade dried fish shop that handles overnight dried fish such as Atka mackerel, mackerel, and herring. This weekly program not only teaches how to make dried fish, but also how to select delicious dried fish and tips for selecting fish, which can be used in everyday life.
