Yokote City, Akita Prefecture, is a city of fermentation. In this city where fermentation culture is integrated into daily life, you can experience pairing fermented food with alcohol. You can also hear about sake from Yamauchi Toji, who has protected and woven the traditional sake brewing method registered as an intangible cultural asset by UNESCO, and about hard cider made from local apples.
