O! Den, run by owner Ishiguro, is one of Abashiri's famous restaurants, requiring reservations. He purchases fresh fish for the number of reservations made that day, always serving dishes made with seasonal Okhotsk fish, and is so meticulous in his selection of ingredients that he sometimes boards a fishing boat himself to learn more about fish, and even rents farmland to grow vegetables for his restaurant. Because the restaurant is bustling with reservations every evening, a special program has been organized for lunchtime. Born in Rausu Town at the base of the Shiretoko Peninsula, owner Ishiguro grew up surrounded by the region's unique food culture.
