2013 Year Japanese cuisine, registered as an intangible cultural heritage by UNESCO, is a dish that attracts attention from overseas. BentoYa Cooking teaches explosively popular menus such as lunch, sushi, tempura, homemade miso class, and other Japanese imaginable dishes, as well as ramen, dumplings, and curry. In order to make it easier for foreigners to understand, we teach them carefully in English and Chinese, including how to choose ingredients and introduction of alternatives.

In this workshop, you will experience the final coating and sprinkling of gold powder on old Japanese pottery that has been restored over time by a Kintsugi expert using real lacquer. The materials used are lacquer and real gold powder. Because it is a natural material, it is a traditional method that is completely food safe and ideal for tableware. Each step up to the finishing stage will be demonstrated using actual tools and materials, and we will introduce the history and philosophy of Kintsugi behind it, as well as various finishing methods and aftercare. Please enjoy the most moving moment of Kintsugi! On the day, you can choose either a small plate or a cup for the Kintsugi experience, and take the completed pottery home as it is. We will also prepare a relaxing tea time with beautiful Japanese sweets. Enjoy a relaxing time while touching Japanese tradition. (All workshops are in English) Kintsugi is a traditional Japanese repair technique that uses lacquer and gold to repair broken or chipped pottery. It is a unique Japanese aesthetic sense that even damaged and imperfect forms are beautiful. By decorating with gold or silver, rather than hiding scratches, you can breathe new life into them and create a sustainable cycle of cherishing things. Repairing also gives you a sense of peace of mind, so it is also called art therapy. Since the repairs are done using natural materials such as lacquer, wood powder, and gold dust, you can rest assured that they can be used on tableware. *This class does not use synthetic resins such as epoxy resins used in modern and simple kintsugi.

In Japan, we eat sushi rolls on special occasions such as celebrations and festivals. It looks beautiful and has an excellent nutritional balance, making it one of Japan's hospitality dishes. Let's make such traditional sushi rolls together! In addition, you can also learn recipes for miso soup and chawanmushi. Lectures will be given in English, so please do not worry if you are not comfortable with Japanese. It's very easy once you get the hang of it! Everyone from children to adults can enjoy it. アメリカ人の友達と2人で参加しました。英語が堪能なインストラクタ-さんで、和やかに楽しく料理をつくることができました。日本人の私は自宅で茶碗蒸しや、本格的な巻きずしを作ったことがありませんが、こうして作るんだ!と非常に参考になりました。出汁をとるところから始まり、興味深々な外国人の友達と私も勉強になりました。3連休でインストラクタ-の方を調整頂くことに大変だったとは思いますが、本当にこちらでお世話になって良かったです。皆さん、是非おススメです!!!

In addition to the "fusion of French and Japanese cuisine" by chef Iwao Asamizuya of the French restaurant and deli "Maison de Cerise" in Daikanyama, and Japanese cuisine by owner Sadaharu Nakajima of "Shinjuku Kappo Nakajima", we will also offer a Japanese cultural experience, including calligraphy by guest Aoyagi Misen, and karate including demonstrations and practical experience (kata). In addition, you will have the valuable experience of seeing the VIP area of the National Stadium, which is normally not accessible. *Consecutive interpretation from Japanese to English will be provided. ■Profile: Iwao Asamizuya (French: November 18th, November 25th) Owner chef of "Maison de Cerise". Born in Tokyo in 1971. He discovered the fun of cooking when he was in high school and became involved in cooking after graduating from a vocational school. At the age of 22, he was fascinated by French cuisine and traveled to France. After that, he studied under Toki at Terra's, Auberge Kusunoki, and Ginza Lecan, and at the age of 29, he opened Maison de Cerise in Setagaya. After seven years of activity, he moved to his current location in Daikanyama. It was renovated in January 2017 and continues to operate today. His philosophy is to always approach cooking with an attitude that puts the ingredients first. He travels around the country every day in search of delicious food and ingredients. ・Nakajima Sadaharu (Japanese cuisine: November 6th, November 20th) Owner and head chef of Shinjuku Kappo Nakajima. Born in Hiroo, Shibuya Ward, Tokyo in 1956. His grandfather was Nakajima Sadajiro, the first head chef of Hoshioka Saryo, run by Kitaoji Rosanjin, and he was born and raised in a family of chefs. After training in Kyoto, he succeeded his father, Sadazo, as the second-generation owner of Shinjuku Kappo Nakajima in 1980. With the taste and technique he has honed since he was a child, he expresses both traditional and new Japanese cuisine. He is highly regarded in the culinary world. He is active in many areas, including media appearances and writing. ・Aoyagi Misen (Japanese culture experience/calligraphy: November 18th, November 25th) He began learning calligraphy at the age of 4 under the influence of his grandmother. He has performed calligraphy performances in over 10 countries around the world. In Japan, he has written calligraphy for the TV anime "Dororo" based on the original work by Osamu Tezuka, the famous hunting game "Monster Hunter Rise", and other games. In 2020, he performed an opening calligraphy performance in front of approximately 58,000 spectators at the "99th Emperor's Cup Final", which was held as the opening sporting event at the National Stadium. The following year, he worked on the VIP room work and the wall work in the flash interview zone at the National Stadium, and has a deep connection with the sacred National Stadium. In 2023, he will perform a dedication calligraphy at the World Heritage Site "Koyasan". He works under the motto of tradition and innovation and has appeared on TBS's "Jonetsu Tairiku."
