O! Den, run by owner Ishiguro, is one of Abashiri's famous restaurants, requiring reservations. He purchases fresh fish for the number of reservations made that day, always serving dishes made with seasonal Okhotsk fish, and is so meticulous in his selection of ingredients that he sometimes boards a fishing boat himself to learn more about fish, and even rents farmland to grow vegetables for his restaurant. You will watch as the owner, Saito, who was the head chef at a hotel in Abashiri city, the city of food, prepares dishes using seafood from Abashiri, and receive instruction in the art of Japanese cuisine. Enjoy his superb knife skills and exquisite cooking. After learning about the differences and tips for preparing seasonal fish, as well as how to use professional seasonings, you will experience making salmon roe pickled in soy sauce (or oysters pickled in oil depending on the season).
