Founded as a grocery store in 1914 (Taisho 3), it is a fishery company that has been making salted fish since 1947 (Showa 22), shortly after the war. There are many salted fish makers in Hakodate and Southern Hokkaido, but we continue to make the old-fashioned "salted fish in wooden barrels", which is rare in Japan. Hakodate prospered as a base for the North Sea fishing industry from the Kitamaebune in the Edo period. Since the opening of the port at the end of the Edo period, it has a gorgeous history as a trading port and has developed its own food culture. Odashima Fisheries inherits the trend of Hakodate's food culture, uses domestically produced Japanese flying squid as the main ingredient, and sticks to wooden barrels that have been used since its establishment. It has a unique taste and flavor that can never be produced with plastic barrels. While there are many salted squids that can be shipped the day after they are prepared, Odashima Fisheries salted the squid for a day and aged it in wooden barrels for a week. During that time, in order to help the activity of microorganisms, the air is replaced by poking the stick for about 5 minutes every day and stirring it. The wooden barrels, which are affected by the weather, are constantly breathing, so we work and maintain them while observing them. We will continue to deliver delicious handmade special salted fish to everyone.
