Local sake brewers and oyster farmers in Rikuzentaka (coastal Iwate Prefecture) have come up with a genius way to mature Japanese sake at the perfect stable temperature, in nature's best cellar – under the sea! Bottles of freshly pressed sake (genshu) are submerged into the ocean alongside shelves of oysters and matured for up to a one year.Once ready for eating and drinking, the oysters and sake are pulled up onto a local boat for guests to enjoy the perfect combination of delicious juicy oysters and smooth, umami-filled sake!
