This field mainly produces Gassan Nishiki, the highest quality variety of yellow cherries known as the queen of cherries. Gassan Nishiki has a high sugar content, and can reach nearly 30% sugar when fully ripe. It is a difficult variety to grow, and is rarely available on the market.
