In 2007, it was selected as one of the "100 Best Local Dishes of Rural Areas" organized by the Ministry of Agriculture, Forestry and Fisheries, which are known in farming, mountain and fishing villages all over Japan and are widely supported by the people. Unlike regular noodles, hoto noodles do not need to be left to rest. Therefore, you will make the noodles by hand from the powder state. It will be quite a voluminous meal, so please come hungry. The most appealing part of the experience at the local cooking class "Fujiya" is that you can "hand-make" the hoto noodles yourself from powder form. The taste of the hoto you make yourself is exceptional, so please come hungry. There are few local foods that are as popular as this one, and the rhythm of daily life in Yamanashi (Koshu) was ``oneri in the morning, barley rice in the afternoon, and pumpkin hotou in the evening.'' As the saying goes, ``It's delicious, pumpkin hotou'', it is a local food that can be proud of throughout the country, and is still loved by many people throughout its long history. Unlike udon and soba, hoto is characterized by the fact that the raw noodles are simmered with the ingredients, so the soup thickens and does not cool easily. Since no salt is kneaded into the noodles, they won't be chewy, but there's no need to remove the salt, so you can simmer them as is with the ingredients. Hoto soup is basically miso-based. In the past, miso was mainly made from Koshu miso, which was handmade at each home and was prepared using both rice koji and barley koji. On the other hand, there are no fixed rules regarding the ingredients, and basically several types of vegetables are simmered together. It's a great dish that's both filling and healthy.

Suridane was originally a spicy seasoning that was eaten with Yoshida udon, a specialty of the Fuji Five Lakes, but Fujiya manufactures various types of suridane in-house and offers over 70 types of suridane. Arrive at the experience venue Please come to the venue 10 minutes before the start of the experience. Please contact us in advance if your arrival is delayed, as there are reservations available. The Fuji family store is a traditional Japanese house. As soon as you arrive, we will wash your hands at the entrance and guide you to the experience venue.

Making hoto dough In the Fuji family hoto making experience, each person will make their own dough and noodles. (For example, two people do not make one dough.) Speed is important for making dough. Mix quickly and carefully so that the water and flour blend well.
Roll out the hoto dough Once you have the hoto dough, use a rolling pin to spread the dough. The noodles are very thin compared to udon noodles, so you can almost extend them to pechanko. When you put your weight on it, the fabric will stretch smoothly, so it is recommended to stretch it while standing on your knees!
Cut the hoto dough When you have a thin dough, cut it with a knife at the end. The width is just right to match the width of the index finger. However, there are no strict rules regarding the width of hoto noodles, so you can cut them freely.
Completion of hoto noodles The hoto noodles are complete! Please take a picture with the cut noodles. This is the end of the hoto making experience. Next, prepare to boil the hoto in the dining room.
Boil hoto noodles When boiling hoto, we will boil the hoto in groups of two, three, and four. When the hoto soup is boiling, add the handmade noodles. Immediately after adding the noodles, the noodles tend to stick to each other, so loosen them with chopsticks.
Add hoto ingredients After loosening the hoto noodles, add the hoto ingredients at the end. There are no rules for hoto ingredients, but pumpkin is a must. Add the noodles and boil for about 10 minutes. While boiling, the bottom of the pan is easy to burn, so stir it with chopsticks. It's almost time to complete the hoto!
Completion of hoto! The handmade hoto is completed! Hoto soup has the characteristic that the noodle flour (potato starch) melts and becomes a little thicker. Since it warms from the core of the body, it is basically eaten as a winter dish.
The all-purpose spicy seasoning "Suridane" is recommended! There are many "Yoshida no udon" shops in the Fujiyoshida / Kawaguchiko area. The spicy taste of the specialty called "Suridane" is always present at Yoshida's udon shop. The Fuji family also offers 10 types of original m sushi. You can also sample it, so please enjoy it with hoto. * There are many people who are addicted to the spiciness and umami.
