Seiro-soba Seiro-soba is eaten with a fresh-brewed soup stock of bonito fish.
Shojinseiro-soba A seiro-soba is eaten with refined soup stock of Hidaka kelp and domestic shiitake mushrooms.
Sudachi-soba Cold noodles with Tokushima produce Japanese lime on top. Can be served with hot soup.

Owner's profile He has worked as an engineer at electronics manufacturing company for 25 years. He retired earlier to become a soba noodle chef and obtained a cook license and food education instructor qualification at the culinary academy. Moreover, he used to eat around soba in many places and obtained an edo-sobalier qualification.
