The water is boiled over charcoal, making it mellow and even more delicious. The sound of boiling water and the sound of a mortar when grinding matcha is called "matsukaze". It's a very healing sound ~ ☆ Trivia ☆ The beginning of Matcha was brought back by Eisai Zen Master when he went to China to study Zen Buddhism at the end of the 12th century. It is said to be tea fruit and Yagen, and was used to make medicine.
