Local sake brewers and oyster farmers in Rikuzentaka (coastal Iwate Prefecture) have come up with a genius way to mature Japanese sake at the perfect stable temperature, in nature’s best cellar – under the sea! Bottles of freshly pressed sake (genshu) are submerged into the ocean alongside shelves of oysters and matured for up to a one year. Warm-up for the experience with an overnight stay at a traditional Japanese hot-spring hotel the evening before.
